I hope this post will give you a better insight into how I completed my prerequisites for vet school in 3 years and how you can too!
This is a chart depicting which of the classes I took (at Michigan State) that fulfilled the prerequisites of my instate CVM (Michigan State). With these classes I ultimately was able to apply to 6 out of state schools in addition to my instate school.

Senior Year: I applied to vet school between my Sophomore and Junior years. I condensed my prerequisites into 3 years and had I not been accepted I would have spent my senior year completing my bachelors degree.
Your story is very inspiring. Good luck on your career. Do you have a format for the logs you maintained for the jobs, interns, shadow work you did and more important were these endorsed by the respective managers.
